The journey of Midnight Flyer begins with the careful handpicking of ripe cherries from three central buying centers. These cherries are then transported to the Nyabirongo washing station, where they undergo a meticulous process of pulping and fermentation for approximately 24 hours.
Following this, the coffee parchment is dried using either raised beds or mechanical methods, ensuring the beans reach their full potential. Once fully dried, the parchment is stored in our warehouse until it's time for export. The final step includes hulling, grading, and bagging, resulting in a premium coffee product ready to be savored.
As a washed coffee, Midnight Flyer consistently maintains a reliable quality with an SCA score between 83 and 84.
